Holiday leftovers are a cook's frugal muse.
Turkey and cranberry sandwiches... turkey salad...turkey soup... ham + turkey pie. When the meat is gone, then comes soups/pot pies/etc with the leftover carcass and broth stock.
Leftover baked vegetables...vegetable frittata.
